Paul Mantarakis (d. 1916) was a soldier in the United States Army, hailing from Philadelphia, Pennsylvania. Prior to the Great War, he was a cook in Philadelphia as was his father. He served in General George Custer's First Army, starting as a private during the invasion of Kentucky. After many actions, and the strafing of his column by Confederate aircraft, he was promoted to the rank of Corporal.

Due to the fact that he had been a cook in civilian life, he became the unofficial company cook. This was to the advantage of his fellow soldiers, because the official company cook, Private Ben Carlton, despite his skill at scrounging, was completely inept at cookery. Unfortunately, as he rose in rank, he was less able to cook for his unit. After the Mormon uprising, his division was sent to Utah. There, he was promoted to Sergeant. Once the fighting for Utah was over, his unit and him were sent to invade Baja California. There, he met his end. Paul Mantarakis died from a leg wound that severed his femoral artery, causing him to bleed out. He was Greek Orthodox, a cause of contention between himself and Gordon McSweeney.
